Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found.

The Caol Ila Distillery, The name Caol Ila comes from the Gaelic ‘Caol Ila’ meaning ‘Sound of Islay’ which is the stretch of water which separates Islay from Jura. The distillery was founded in 1846 and has been very successful through its long history. The distillery draws water from the nearby loch which is surrounded by myrtle and heather. As did most distilleries it closed during the Great Depression from 1930 to 1937 and was reconstructed from 1972 to 1974. Juggling between old traditional methods and modern methods of using new technology. This distillery produces whiskies that have chocolate, citrus and floral notes as well as tangy and peaty, which is typical of an Islay whisky.

This independent bottle by Signatory has been matured in two ex Bourbon Hogsheads for 10 years and it was bottled at 43% abv. It was distilled on the 16th of November 2009 and bottled on the 7th of February 2020.

Our Tasting Notes

Nose: Bread and butter pudding with sea salt and freshly cut grass.

Palate: Creamy and buttery, orchard fruits of apricots and grapes, peat smoke and toasted oak.

Finish: Toasted oak and salted honey.
